Golden and crispy squash patties made with fresh squash, perfect as a side dish or snack.

- 2 medium yellow squash, grated
- 1/2 cup finely chopped onion
- 1/2 cup shredded cheddar cheese
- 1/2 cup all-purpose flour
- 1 large egg
- 1/4 cup breadcrumbs
- 2 cloves garlic, minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil or vegetable oil, for frying
Instructions
- Place grated squash in a clean kitchen towel and squeeze out excess moisture.
- In a large bowl, combine the drained squash, chopped onion, cheddar cheese, flour, egg, breadcrumbs, garlic, salt, and pepper.
- Mix until well combined.
- Heat oil in a large skillet over medium heat.
- Form the mixture into small patties and place them in the hot skillet.
- Cook for 3-4 minutes on each side or until golden brown and crispy.
- Remove and drain on paper towels.
- Serve warm with your favorite dipping sauce.
Notes
- You can substitute zucchini for yellow squash.
- Add chopped herbs like parsley or chives for extra flavor.
- For a gluten-free version, use gluten-free flour and breadcrumbs.
- Serve with sour cream or a yogurt-based dip.
