Description

Golden and crispy squash patties made with fresh squash, perfect as a side dish or snack.


Ingredients

  • 2 medium yellow squash, grated
  • 1/2 cup finely chopped onion
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil or vegetable oil, for frying

Instructions

  1. Place grated squash in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, combine the drained squash, chopped onion, cheddar cheese, flour, egg, breadcrumbs, garlic, salt, and pepper.
  3. Mix until well combined.
  4. Heat oil in a large skillet over medium heat.
  5. Form the mixture into small patties and place them in the hot skillet.
  6. Cook for 3-4 minutes on each side or until golden brown and crispy.
  7. Remove and drain on paper towels.
  8. Serve warm with your favorite dipping sauce.

Notes

  • You can substitute zucchini for yellow squash.
  • Add chopped herbs like parsley or chives for extra flavor.
  • For a gluten-free version, use gluten-free flour and breadcrumbs.
