These St. Patrick’s Day Crispy Treats are a fun and festive twist on the classic Rice Krispies treat! - 6 cups Rice Krispies Cereal
- 1/4 cup Unsalted Butter
- 1 package (10 oz) Mini Marshmallows
- 1/2 tsp Vanilla Extract
- 1/2 tsp Green Food Coloring
- 1/4 cup Green Sprinkles (optional, for decoration)
- 1/4 cup White Chocolate Chips (optional, for drizzling)
Instructions
- Prepare the Pan:
- Lightly grease a 9×13-inch baking dish with butter or cooking spray. Set aside.
- Melt the Butter and Marshmallows:
- In a large saucepan, melt the butter over medium heat.
- Once the butter is melted, add the mini marshmallows and stir continuously until they are fully melted and smooth.
- Add Food Coloring and Vanilla:
- Stir in the green food coloring until the mixture reaches your desired shade of green.
- Add the vanilla extract and stir until combined.
- Combine with Rice Krispies:
- Remove the saucepan from heat and quickly add the Rice Krispies cereal. Stir gently until all the cereal is coated with the marshmallow mixture.
- Press Into the Pan:
- Pour the mixture into the prepared baking dish and press it down evenly using a spatula or your hands (you can butter your hands to prevent sticking). Be sure to press down gently to avoid smashing the treats.
- Decorate (Optional):
- If desired, sprinkle the top with green sprinkles for extra color and festive flair.
- For an added touch, melt the white chocolate chips in a microwave-safe bowl and drizzle it over the top of the treats.
- Let Set and Serve:
- Let the treats set at room temperature for about 30 minutes, or until firm.
- Once set, cut them into squares or rectangles, and they’re ready to serve!
Notes
- These treats can easily be customized by adding other mix-ins, like mini chocolate chips, rainbow sprinkles, or crushed cookies.
- If you prefer to avoid food coloring, you can skip it, and the treats will still be delicious (just not as green!).
- These treats can be stored in an airtight container for up to 3 days at room temperature.
