Description

These festive St. Patrick’s Day Frosted Bite Brownies are perfect for celebrating the holiday! With rich, fudgy brownies topped with a vibrant green frosting and sprinkled with festive decorations, these little bites of heaven are sure to be a hit at your St. Patrick’s Day party!

Ingredients

Scale

For the brownies:

  • 1 box of brownie mix (or homemade brownies if preferred)
  • ½ cup vegetable oil (or as instructed on the brownie mix box)
  • 2 large eggs
  • 2 tbsp water (or as instructed on the brownie mix box)
  • ¼ tsp peppermint extract (optional for a minty twist)

For the frosting:

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 23 tbsp heavy cream
  • 1 tsp vanilla extract
  • ½ tsp green food coloring (gel or liquid)
  • A pinch of salt

For garnish (optional):

  • Green sprinkles or shamrock decorations
  • White chocolate chips or mini marshmallows (optional)

Instructions

  1. Prepare the brownies:
Preheat your oven to 350°F (175°C). Prepare the brownie mix according to the instructions on the box. If you’re using a homemade brownie recipe, follow the instructions for baking.
  2. Bake the brownies:
Grease a 9×9-inch square baking pan or line it with parchment paper. Pour the brownie batter into the prepared pan and bake according to the instructions on the box (usually about 20-25 minutes). If you’re using a homemade recipe, follow the baking time listed in the recipe. To check for doneness, insert a toothpick into the center of the brownies—if it comes out with a few moist crumbs, they’re done.
  3. Cool the brownies:
Once the brownies are done baking, remove them from the oven and let them cool completely in the pan on a wire rack.
  4. Make the frosting:
In a mixing bowl, beat the softened butter with an electric mixer until smooth. Gradually add the powdered sugar, one cup at a time, until fully incorporated. Add the heavy cream, vanilla extract, and a pinch of salt, and continue to beat until the frosting is fluffy and smooth. Add the green food coloring, a little at a time, until you achieve your desired shade of green.
  5. Frost the brownies:
Once the brownies have cooled, spread the green frosting evenly over the top using a spatula. You can make it smooth or add a little swirl effect for extra flair.
  6. Cut into bite-sized pieces:
Using a sharp knife, cut the frosted brownies into small bite-sized squares or rectangles, perfect for sharing.
  7. Garnish and serve:
Optionally, garnish with green sprinkles, white chocolate chips, mini marshmallows, or shamrock decorations for an extra touch of St. Patrick’s Day fun!

Notes

  • If you’re using store-bought brownie mix, feel free to substitute the mint extract for a regular vanilla extract if you prefer a classic flavor.
  • You can also use cream cheese frosting for a tangy twist, especially if you like a tangier contrast with the sweet brownies.
  • These brownies are perfect for parties, or you can wrap them in cellophane as cute individual gifts!
