Description

Enjoy a homemade version of the popular Starbucks Spinach Feta Wrap. Packed with fresh spinach, egg whites, sun-dried tomatoes, and creamy feta, this nutritious wrap is perfect for breakfast or a light lunch.


Ingredients

  • 2 tablespoons avocado oil
  • 6 ounces fresh baby spinach, roughly chopped
  • 1 1/4 cups liquid egg whites
  • 1 teaspoon salt
  • 4 ounces plain cream cheese, room temperature
  • 1/2 cup julienne-cut sun-dried tomatoes, drained
  • 1/2 cup crumbled feta cheese
  • Black pepper to taste
  • 6 whole wheat tortillas, burrito size

Instructions

  • Cook spinach: Heat 1/2 tablespoon avocado oil in a large skillet over medium heat. Add spinach and cook until wilted (about 2 minutes). Remove spinach to a plate.
  • Cook egg whites: Add 1 tablespoon avocado oil to the same skillet over medium-low heat. Add egg whites and let sit undisturbed for 3 minutes. Season with salt and scramble until cooked through (2-3 minutes). Remove from heat.
  • Warm tortillas: Heat tortillas in the microwave for 30 seconds to make them pliable.
  • Assemble wraps: Spread cream cheese over the center of each tortilla. Distribute egg whites, sun-dried tomatoes, and feta cheese evenly. Season with salt and pepper. Fold in tortillas on both sides and roll up.
  • Cook wraps: Add remaining 1/2 tablespoon avocado oil to the skillet and cook each wrap over medium heat for 1-2 minutes per side, or until browned.
  • Serve or store: Slice in half and enjoy immediately or store in the refrigerator or freezer for later.
