- 4 medium sweet potatoes
- 4 tbsp maple syrup
- 40g butter
- 25g crushed almonds
- 1 garlic clove, minced
- 3 sprigs of fresh thyme
Instructions
- Preheat oven: Preheat the oven to gas mark 6 / 180 degrees C.
- Slice sweet potatoes: Cut the sweet potatoes widthways into thin 0.5 cm slices.
- Stack sweet potatoes: Stack 6-7 slices into a muffin tray.
- Make maple butter mixture: In a saucepan or skillet on low-medium heat, combine the butter, thyme, almonds, and garlic. Stir until the butter melts and starts to bubble.
- Drizzle maple butter: Divide the butter mixture among all the sweet potato stacks, drizzling it over the top spoonful at a time.
- Bake: Cook in the oven for 30-35 minutes, or until the outside is crispy and the inside is buttery.
