Description

These Sticky Maple Sweet Potato Stacks are a delightful combination of sweet and savory, featuring tender sweet potatoes layered with a rich garlic and almond butter mixture. Baked to crispy perfection, they’re perfect as a side dish or a unique appetizer.


Ingredients

  • 4 medium sweet potatoes
  • 4 tbsp maple syrup
  • 40g butter
  • 25g crushed almonds
  • 1 garlic clove, minced
  • 3 sprigs of fresh thyme

Instructions

  • Preheat oven: Preheat the oven to gas mark 6 / 180 degrees C.
  • Slice sweet potatoes: Cut the sweet potatoes widthways into thin 0.5 cm slices.
  • Stack sweet potatoes: Stack 6-7 slices into a muffin tray.
  • Make maple butter mixture: In a saucepan or skillet on low-medium heat, combine the butter, thyme, almonds, and garlic. Stir until the butter melts and starts to bubble.
  • Drizzle maple butter: Divide the butter mixture among all the sweet potato stacks, drizzling it over the top spoonful at a time.
  • Bake: Cook in the oven for 30-35 minutes, or until the outside is crispy and the inside is buttery.
