Description

Stir-Fried Bok Choy with Ground Meat is a simple, healthy, and flavorful dish featuring tender bok choy and savory ground meat, all cooked together in a delicious stir-fry sauce. This quick and easy recipe is perfect for a weeknight dinner or a light, nutritious meal.

Ingredients

Scale
  • 1 lb ground meat (chicken, pork, turkey, or beef)

  • 4 cups bok choy, chopped (about 4 medium heads)

  • 2 tablespoons vegetable oil (or sesame oil for extra flavor)

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon ginger, minced

  • 2 tablespoons soy sauce (low-sodium recommended)

  • 1 tablespoon oyster sauce (optional, for extra umami)

  • 1 tablespoon hoisin sauce (optional, for sweetness)

  • 1 teaspoon rice vinegar

  • 1 tablespoon sugar (optional, to balance flavors)

  • 1 teaspoon sesame oil (optional, for garnish)

  • Red pepper flakes (optional, for heat)

  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. Prepare the Bok Choy: Rinse the bok choy thoroughly to remove any dirt between the leaves. Chop it into bite-sized pieces and set aside.

  2. Cook the Ground Meat: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the ground meat and cook, breaking it apart with a spoon until browned and fully cooked (about 5-7 minutes). Remove the cooked meat from the pan and set aside.

  3. Sauté Aromatics: In the same skillet, add another tablespoon of oil if needed. Add the chopped onion, garlic, and ginger. Sauté for 2-3 minutes until fragrant and the onion is softened.

  4. Add the Bok Choy: Add the chopped bok choy to the pan, stirring well to coat it in the oil and aromatics. Cook for 3-4 minutes until the bok choy is tender but still slightly crisp.

  5. Stir in Sauces: Return the cooked ground meat to the pan. Stir in the soy sauce, oyster sauce (if using), hoisin sauce (if using), rice vinegar, and sugar. Mix everything together and cook for another 2-3 minutes, allowing the flavors to meld.

  6. Finish and Serve: If you want to add a bit of heat, sprinkle red pepper flakes on top. Drizzle with sesame oil for extra flavor. Garnish with fresh cilantro or green onions, if desired. Serve immediately over steamed rice or noodles for a complete meal.

Notes

  • You can use any ground meat you prefer, including chicken, turkey, pork, or beef. For a vegetarian version, try using ground tofu or tempeh.

  • Bok choy can be substituted with other leafy greens like spinach or napa cabbage if necessary.

  • Adjust the soy sauce and oyster sauce to your taste preference, adding more for saltiness or umami.

  • For extra flavor, you can add a splash of fish sauce or chili paste.

  • Serve this stir-fry over rice or noodles for a hearty meal.
