Description

A hearty and comforting casserole featuring ground beef, potatoes, and carrots, perfect for family dinners or gatherings.


Ingredients

Scale
  • 1 1/2 pounds of ground beef, browned and drained
  • 5 pounds of russet potatoes, peeled and cut into cubes
  • 1 pound of carrots, sliced into thin rounds
  • 1 red onion, finely chopped
  • 1 1/2 to 2 cups hot water
  • Salt and pepper, to taste

Instructions

  • Peel and dice the potatoes into 1/2″ cubes. Slice the carrots and chop the onion.
  • Cook the ground beef in a large pot over medium-high heat until browned. Season with salt and pepper.
  • Remove the beef and set aside. In the same pot, cook the onions until soft.
  • Drain excess grease and return the beef, potatoes, and carrots to the pot.
  • Add hot water and season. Stir to combine and bring to a boil, then cover and reduce heat.
  • Cook for 5 minutes, stir, and add more water if needed. Cook for an additional 7-10 minutes until potatoes are tender.
  • Adjust seasoning and serve.

Notes

  • For extra flavor, let some beef stick to the pot while cooking.
  • Serve with steamed broccoli or salad.
