Description

This Strawberry and Tomato Salad is a refreshing and unique combination of sweet strawberries and ripe tomatoes, tossed with a light vinaigrette dressing. It’s a perfect summer salad that’s light, flavorful, and full of vibrant colors.

  • 1 pint fresh strawberries, hulled and sliced
  • 1 cup cherry tomatoes, halved (or use heirloom tomatoes for more flavor)
  • 1/2 cucumber, thinly sliced (optional, for extra crunch)
  • 1/4 red onion, thinly sliced
  • 1/4 cup fresh basil, chopped (or whole leaves for garnish)
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar (or apple cider vinegar)
  • 1 teaspoon honey (optional, for added sweetness)
  • Salt and pepper, to taste

 

  • 1/4 cup crumbled feta cheese (optional, for added creaminess)

Instructions

  1. Prepare the Vegetables and Fruits:

    • Slice the strawberries and tomatoes, and cut the cucumber (if using) into thin slices. Thinly slice the red onion.
    • Place the sliced strawberries, tomatoes, cucumber, and red onion in a large mixing bowl.
  2. Make the Dressing:

    • In a small bowl, whisk together the olive oil, balsamic vinegar (or apple cider vinegar), honey (if using), salt, and pepper. Taste and adjust the seasoning as needed.
  3. Toss the Salad:

    • Pour the dressing over the salad and toss gently to combine. Be careful not to mash the strawberries and tomatoes.
  4. Add Garnishes:

    • Sprinkle the chopped fresh basil and crumbled feta cheese (if using) on top of the salad.
  5. Serve:

    • Serve the salad immediately as a light starter, side dish, or enjoy it on its own for a refreshing meal.

Notes

  • Tomato Varieties: You can mix different types of tomatoes for variety—use heirloom, grape, or vine-ripened tomatoes for different textures and flavors.
