Description

  • 4 cups fresh strawberries, sliced
  • 1/4 cup granulated sugar (for the strawberries)
  • 1 1/2 cups heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

 

  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Prepare the Strawberries:

    • Wash and slice the strawberries. Place them in a bowl and toss with granulated sugar. Let them sit for about 15-20 minutes to release their juices and make a light strawberry syrup.
  2. Whip the Cream:

    • In a large bowl, beat the heavy whipping cream with powdered sugar and vanilla extract until stiff peaks form. This will be your whipped cream topping.
  3. Assemble the Cake:

    • Slice the angel food cake into layers or into cubes (depending on how you want to serve it). If you’re using a whole cake, you can slice it horizontally into 2 or 3 layers.
    • In a large serving dish, layer the angel food cake pieces with the macerated strawberries and whipped cream. Start with a layer of cake, followed by strawberries, then whipped cream. Repeat the layers until all ingredients are used, finishing with whipped cream on top.
  4. Serve:

    • Garnish with additional fresh strawberries and mint leaves if desired. Serve chilled or at room temperature.

Notes

  • Storage: Store leftover cake in the refrigerator for up to 2 days. The cake is best served fresh, but it will still be delicious the next day.
  • Variation: You can swap out strawberries for other fresh berries such as raspberries, blueberries, or blackberries, or even a mixed berry combination.
