- 1/2 cup sour cream
- 3 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup mashed bananas
- 1/2 cup diced strawberries
For the Topping:
- 1 cup whipped cream
- Fresh strawberry slices
- Banana slices
Instructions
- Prepare the Crust:
- Preheat your oven to 325°F (165°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
- Bake for 10 minutes, then let it cool.
- Prepare the Cheesecake Filling:
- In a large mixing bowl, beat the cream cheese and sugar until smooth.
- Add sour cream, vanilla extract, and eggs one at a time, beating well after each addition.
- Fold in the mashed bananas and diced strawberries until evenly distributed.
- Pour the filling over the cooled crust.
- Bake the Cheesecake:
- Bake for 50-60 minutes or until the center is set.
- Turn off the oven and let the cheesecake cool inside with the door slightly open.
- Once cooled, refrigerate for at least 4 hours or overnight.
- Decorate and Serve:
- Top the chilled cheesecake with whipped cream, strawberry slices, and banana slices.
