  • 1/2 cup sour cream
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup mashed bananas
  • 1/2 cup diced strawberries

For the Topping:

  • 1 cup whipped cream
  • Fresh strawberry slices
  • Banana slices

Instructions

  • Prepare the Crust:
    • Preheat your oven to 325°F (165°C).
    • In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan.
    • Bake for 10 minutes, then let it cool.
  • Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the cream cheese and sugar until smooth.
    • Add sour cream, vanilla extract, and eggs one at a time, beating well after each addition.
    • Fold in the mashed bananas and diced strawberries until evenly distributed.
    • Pour the filling over the cooled crust.
  • Bake the Cheesecake:
    • Bake for 50-60 minutes or until the center is set.
    • Turn off the oven and let the cheesecake cool inside with the door slightly open.
    • Once cooled, refrigerate for at least 4 hours or overnight.
  • Decorate and Serve:
    • Top the chilled cheesecake with whipped cream, strawberry slices, and banana slices.
    • Slice, serve, and enjoy every creamy, fruity bite!
