Description

This Strawberry Birthday Cake Roll is a light, fluffy, and festive dessert perfect for birthdays or any special occasion! A soft cake is filled with whipped cream and fresh strawberries, rolled up into a beautiful treat.

  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup powdered sugar (for dusting)
  • 1 cup whipped cream
  • 1 cup sliced strawberries

Instructions

  • Preheat oven to 375°F (190°C). Line a 10×15-inch jelly roll pan with parchment paper.
  • In a large bowl, beat the eggs, granulated sugar, and vanilla extract until light and fluffy.
  • In a separate bowl, sift together the flour, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until fully combined.
  • Pour the batter into the prepared pan and spread evenly. Bake for 10-12 minutes or until the cake springs back when lightly touched.
  • While the cake is still warm, sprinkle powdered sugar over the top. Invert the cake onto a clean kitchen towel. Carefully roll the cake with the towel from short end to short end and allow it to cool completely.
  • Once cooled, unroll the cake and spread whipped cream over the surface. Top with sliced strawberries.
  • Roll the cake back up, without the towel, and chill in the refrigerator for at least 1 hour before serving.
