- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup champagne or sparkling wine
- 1/2 cup buttermilk
- 1 tsp vanilla extract
- 1/2 cup finely chopped fresh strawberries
- For Frosting:
- 1/2 cup unsalted butter, softened
- 3 cups powdered sugar
- 2 tbsp champagne or sparkling wine
- 1/4 cup pureed fresh strawberries
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Line a 12-cup muffin tin with cupcake liners.
- In a bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition.
- Mix in vanilla extract.
- Alternately add flour mixture and champagne, beginning and ending with flour mixture. Mix just until combined.
- Fold in buttermilk and chopped strawberries gently.
- Divide batter evenly among cupcake liners, filling each about 2/3 full.
- Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Let cupcakes cool completely on a wire rack before frosting.
- For frosting, beat butter until creamy. Gradually add powdered sugar, then champagne, strawberry puree, and vanilla. Beat until smooth and fluffy.
- Pipe or spread frosting onto cooled cupcakes. Garnish with fresh strawberry slices if desired.
Notes
- Use a good quality champagne or sparkling wine for best flavor.
- Fresh strawberries can be replaced with frozen, thawed and drained.
- Store cupcakes in an airtight container in the fridge for up to 3 days.
