Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup champagne or sparkling wine
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1/2 cup finely chopped fresh strawberries
  • For Frosting:
    • 1/2 cup unsalted butter, softened
    • 3 cups powdered sugar
    • 2 tbsp champagne or sparkling wine
    • 1/4 cup pureed fresh strawberries
    • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line a 12-cup muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in vanilla extract.
  6. Alternately add flour mixture and champagne, beginning and ending with flour mixture. Mix just until combined.
  7. Fold in buttermilk and chopped strawberries gently.
  8. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  9. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  10. Let cupcakes cool completely on a wire rack before frosting.
  11. For frosting, beat butter until creamy. Gradually add powdered sugar, then champagne, strawberry puree, and vanilla. Beat until smooth and fluffy.
  12. Pipe or spread frosting onto cooled cupcakes. Garnish with fresh strawberry slices if desired.

Notes

  • Use a good quality champagne or sparkling wine for best flavor.
  • Fresh strawberries can be replaced with frozen, thawed and drained.
  • Store cupcakes in an airtight container in the fridge for up to 3 days.
