For the crust:

  • 1 1/2 cups Graham cracker crumbs
  • 1/4 cup Granulated sugar
  • 1/2 cup Unsalted butter (melted)

For the cheesecake filling:

  • 2 (8 oz) packages Cream cheese (softened)
  • 1 cup Granulated sugar
  • 1 tsp Vanilla extract
  • 2 Large eggs
  • 1/4 cup Sour cream
  • 1/4 cup Heavy cream (or milk)

For the strawberry topping:

  • 2 cups Fresh strawberries (hulled and sliced)
  • 1/4 cup Granulated sugar
  • 1 tbsp Lemon juice (optional, for added flavor)

Instructions

  1. For the crust:
    • 1 1/2 cups Graham cracker crumbs

Notes

  • Preheat the oven: Preheat your oven to 325°F (163°C). Grease and line an 8×8-inch baking pan with parchment paper or foil for easy removal.
  • Prepare the crust: In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined. Press the mixture evenly into the bottom of the prepared baking pan. Bake the crust for 8-10 minutes, or until golden. Remove from the oven and let it cool while you prepare the filling.
  • Make the cheesecake filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Add the granulated sugar and vanilla extract, and continue beating until creamy. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and heavy cream until smooth.
  • Bake the cheesecake bars: Pour the cheesecake filling over the cooled crust and smooth the top with a spatula. Bake for 30-35 minutes, or until the center is set and the edges are lightly golden. Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours, or overnight, to set completely.
  • Prepare the strawberry topping: In a medium saucepan, combine the fresh strawberries, sugar, and lemon juice (if using). Cook over medium heat, stirring occasionally, until the strawberries release their juices and the mixture thickens slightly (about 5-7 minutes). Remove from heat and let it cool to room temperature.
  • Assemble the bars: Once the cheesecake has chilled and set, spread the strawberry topping evenly over the top of the cheesecake. Cut into bars and serve!
