Instructions

- Assemble the Sandwiches:
- Lay out 12 of the shortbread cookies on a flat surface. These will be the bottoms of your sandwiches.
- Spoon or pipe a generous amount of the cheesecake filling onto each cookie.
- Place a few thin slices of fresh strawberry on top of the cheesecake filling.
- Top the Sandwiches:
- Place the remaining 12 cookies on top of the filled cookies to create sandwich-style desserts.
- Chill the Sandwiches:
- Refrigerate the assembled strawberry cheesecake sandwiches for at least 30 minutes to allow the filling to set and the flavors to meld together.
- Serve:
