- In a bowl, mix cream cheese, sugar, vanilla extract, and strawberry jam/puree until smooth and silky. Cover and refrigerate while you prepare the cookie dough.
- In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until the mixture is smooth and fully combined.
- In a separate bowl, combine flour, baking soda, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until a smooth dough forms.
- Fold in the crushed freeze-dried strawberries.
- Cover the dough with plastic wrap and refrigerate for about 30 minutes.
