Taco Shells:

  • 6 small flour tortillas

  • 1 cup heavy whipping cream

Instructions

  • Prepare the Taco Shells:
    • In a bowl, mix the granulated sugar and cinnamon. Set aside.
    • Heat oil in a deep pan over medium heat.
    • Using tongs, fold the tortillas in half and carefully fry each tortilla until golden and crispy, about 2-3 minutes.
    • Immediately coat the fried tortillas in the cinnamon-sugar mixture. Let them cool on a wire rack.

    • In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
    • In a separate bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until well combined.
  • Prepare the Strawberry Topping:
    • In a small bowl, combine the diced strawberries, granulated sugar, and lemon juice. Mix well and let it sit for 5-10 minutes to release the juices.

    • Fill each cinnamon-sugar-coated taco shell with the cheesecake filling using a piping bag or spoon.
