- 1 cup graham cracker crumbs
- ½ cup finely chopped dried strawberries (or freeze-dried strawberries)

- 8 oz white chocolate, chopped (or white chocolate chips)
- Optional: Extra graham cracker crumbs or powdered sugar for rolling
Instructions
- In a large bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
- Add the powdered sugar and mix until fully combined.
- Stir in the graham cracker crumbs, finely chopped dried strawberries, vanilla extract, and lemon juice (if using). Mix until the mixture is smooth and well combined.
- Use your hands or a cookie scoop to form small balls of the mixture, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
- Freeze the truffle balls for at least 30 minutes to help them firm up.
- While the truffle balls are chilling, melt the white chocolate in a microwave-safe bowl, heating in 30-second intervals and stirring in between, until smooth and fully melted.
- Once the truffle balls are chilled, dip each one into the melted white chocolate, coating it completely.
- Place the chocolate-covered truffles back on the parchment-lined baking sheet. If desired, roll the truffles in extra graham cracker crumbs or powdered sugar for extra flavor and texture.
- Return the truffles to the fridge for another 30 minutes to allow the chocolate to set.
- Once the white chocolate has hardened, the truffles are ready to enjoy! Store in an airtight container in the fridge for up to a week.

- You can also roll the truffles in crushed freeze-dried strawberries for an extra pop of flavor and color.
