Ingredients

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup graham cracker crumbs
  • ½ cup finely chopped dried strawberries (or freeze-dried strawberries)
  • 1 tsp vanilla extract
  • ½ tsp lemon juice (optional, for tang)
  • 8 oz white chocolate, chopped (or white chocolate chips)
  • Optional: Extra graham cracker crumbs or powdered sugar for rolling

Instructions

  1. In a large bowl, beat the softened cream cheese with a hand mixer until smooth and creamy.
  2. Add the powdered sugar and mix until fully combined.
  3. Stir in the graham cracker crumbs, finely chopped dried strawberries, vanilla extract, and lemon juice (if using). Mix until the mixture is smooth and well combined.
  4. Use your hands or a cookie scoop to form small balls of the mixture, about 1 inch in diameter, and place them on a parchment-lined baking sheet.
  5. Freeze the truffle balls for at least 30 minutes to help them firm up.
  6. While the truffle balls are chilling, melt the white chocolate in a microwave-safe bowl, heating in 30-second intervals and stirring in between, until smooth and fully melted.
  7. Once the truffle balls are chilled, dip each one into the melted white chocolate, coating it completely.
  8. Place the chocolate-covered truffles back on the parchment-lined baking sheet. If desired, roll the truffles in extra graham cracker crumbs or powdered sugar for extra flavor and texture.
  9. Return the truffles to the fridge for another 30 minutes to allow the chocolate to set.
  10. Once the white chocolate has hardened, the truffles are ready to enjoy! Store in an airtight container in the fridge for up to a week.

  • You can also roll the truffles in crushed freeze-dried strawberries for an extra pop of flavor and color.
