Ingredients
Scale
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar (more if needed for consistency)
- 1/4 cup fresh strawberries, pureed (about 4–5 medium strawberries)
- 1 teaspoon vanilla extract
- Pinch of salt (optional)
Instructions
-
1. Prepare the Strawberries:
- Wash and hull the strawberries. Place them in a blender or food processor and blend until smooth. If you prefer a smoother frosting, you can strain the puree to remove the seeds. Set the puree aside.
2. Cream the Butter and Cream Cheese:
- In a medium bowl, beat the softened cream cheese and butter together using a hand mixer or stand mixer until smooth and fluffy (about 2-3 minutes).
3. Add the Strawberry Puree:
- Gradually add the strawberry puree to the cream cheese and butter mixture, mixing until well combined. Be sure to add it slowly to prevent the frosting from becoming too runny.
4. Add Powdered Sugar:
- Gradually add the powdered sugar, 1/2 cup at a time, and continue to mix until you reach your desired frosting consistency. If the frosting is too thin, add more powdered sugar until it thickens up.
5. Flavor and Finish:
- Stir in the vanilla extract and a pinch of salt (optional). Taste and adjust sweetness if needed, adding more powdered sugar if you like it sweeter.
6. Use or Store:
- The frosting is now ready to be spread on your favorite cake, cupcakes, or cookies. If not using immediately, store the frosting in an airtight container in the refrigerator for up to 3-4 days. Allow it to come to room temperature before using if it firms up in the fridge.
Notes
- Strawberry Puree: Fresh strawberries work best for the pureed part. If you use frozen strawberries, make sure to thaw them completely and drain off any excess liquid.
- Consistency: If the frosting is too runny, add more powdered sugar; if it’s too thick, add a little more strawberry puree or a few drops of milk.
- Storage: Store leftover frosting in an airtight container in the refrigerator for up to 3-4 days. If refrigerated, bring it to room temperature before reusing and give it a quick mix to restore the texture.
