For the choux pastry:

  • 1 cup water
  • ½ cup unsalted butter
  • 1 cup all-purpose flour

  • 4 large eggs

  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 ½ cups fresh strawberries, diced
  • 12 tbsp strawberry jam (optional, for extra flavor)

For garnish:

  • Powdered sugar (for dusting)
  • Fresh mint leaves (optional)

Instructions

  1. Make the choux pastry: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. In a medium saucepan, bring the water and butter to a boil over medium heat. Stir until the butter is melted. Add the flour and salt all at once, stirring vigorously until the mixture forms a smooth dough and pulls away from the sides of the pan (about 1-2 minutes). Remove from heat and let it cool for about 5 minutes.
  2. Add the eggs: One at a time, beat in the eggs using a hand mixer or stand mixer. Make sure each egg is fully incorporated before adding the next. The dough should be smooth, shiny, and thick.
  3. Shape the cream puffs: Using a spoon or a piping bag, scoop or pipe small mounds of dough onto the prepared baking sheet, leaving about 2 inches between each puff. You can make them about 1.5 to 2 inches in diameter. Wet your finger and gently smooth the tops of the puffs.
  4. Bake the puffs: Bake the cream puffs for 20-25 minutes, or until they are golden brown and puffed up. Once done, remove them from the oven and let them cool completely on a wire rack.
  5. Make the whipped cream filling: In a large mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Be careful not to overbeat.
  6. Prepare the strawberries: While the cream puffs are cooling, dice the fresh strawberries and place them in a small bowl. If you’d like, you can mix the strawberries with a little bit of strawberry jam to add more sweetness and flavor.
  7. Assemble the cream puffs: Once the cream puffs have cooled, carefully slice each one in half. Pipe or spoon a generous amount of whipped cream onto the bottom half of each puff. Top with a few pieces of diced strawberries.
  8. Top and garnish: Place the top half of the cream puff back on, dust with powdered sugar, and garnish with fresh mint leaves for a beautiful presentation.
  9. Serve: Serve the strawberry cream puffs immediately for the best taste and texture.

Notes

  • You can prepare the choux pastry ahead of time and store the baked puffs in an airtight container for up to 2 days. Fill them just before serving.
  • If you don’t have strawberry jam, you can substitute with raspberry or apricot jam for a different flavor profile.
  • For a lighter filling, you can substitute some of the whipped cream with Greek yogurt or mascarpone.
