For the Crumble Topping:

- 1/2 cup old-fashioned oats
- 1/2 cup brown sugar, packed
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup unsalted butter, cold and cubed
Instructions
- Prepare the Filling:
- Preheat your oven to 375°F (190°C) and grease or line an 8×8-inch baking dish with parchment paper.
- In a large mixing bowl, combine the sliced strawberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss until the strawberries are evenly coated.
- Pour the mixture into the prepared baking dish and spread it out evenly.
- Make the Crumble Topping:
- In a medium bowl, combine the flour, oats, brown sugar, cinnamon, and salt. Mix well.
- Add the cold, cubed butter to the dry mixture. Use a pastry cutter or your fingers to cut the butter into the mixture until it resembles coarse crumbs.
- Assemble and Bake:
- Sprinkle the crumble topping evenly over the strawberry filling.
- Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the filling is bubbling.
- Cool and Serve:
- Let the strawberry crumble cool for 10-15 minutes before serving.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat!
