  • 1 cup strawberry crunch crumble (see below)

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream

For the Strawberry Crunch Crumble:

  • 15 Golden Oreos, crushed
  • 3 tbsp freeze-dried strawberries, crushed
  • 3 tbsp melted butter

For Garnish:

  • Fresh strawberries, sliced
  • Strawberry sauce (optional)

Instructions

  • Make the Strawberry Crunch Crumble:
    • In a bowl, combine crushed Golden Oreos, crushed freeze-dried strawberries, and melted butter. Mix until the crumble sticks together. Set aside.
  • Fry the Taco Shells:
    • Heat oil in a deep skillet over medium heat.
    • Carefully fry each tortilla until golden brown and crispy, shaping them into a taco shell as they fry.
    • Remove from the oil and drain on paper towels.
    • While still warm, coat each taco shell in the strawberry crunch crumble by pressing the crumble onto the shells.
  • Make the Cheesecake Filling:
    • In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
    • In another bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture until smooth and creamy.
  • Assemble the Tacos:
    • Pipe the cheesecake filling into each prepared taco shell.
    • Top with fresh strawberry slices and a drizzle of strawberry sauce (if using).
  • Serve:
    • Serve immediately and enjoy these deliciously crunchy, creamy strawberry cheesecake tacos!

Notes

  • For a richer flavor, you can use homemade whipped cream instead of store-bought.
