- 2 cups fresh strawberries (hulled and chopped)
- ¾ cup granulated sugar
- 1 tbsp cornstarch
- 1 tsp lemon juice
- 1 tsp vanilla extract
- 1 package (14 oz) refrigerated pie crusts (or homemade crust)
- 1 egg (beaten, for egg wash)
- 1 tbsp coarse sugar (for sprinkling, optional)
Instructions
- Preheat the Oven:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. - Prepare the Strawberry Filling:
In a medium saucepan, combine chopped strawberries, sugar, cornstarch, lemon juice, and vanilla extract. Cook over medium heat, stirring occasionally, until the mixture thickens (about 5-7 minutes). Remove from heat and allow it to cool for a few minutes. - Prepare the Pie Crusts:
Roll out the pie crusts on a floured surface. Using a round cutter (about 4 inches in diameter), cut out circles of dough. You should get about 8-10 circles depending on the size. - Assemble the Hand Pies:
Spoon about 1 tablespoon of the strawberry filling onto the center of each dough circle. Be sure not to overfill. Fold the dough over the filling to create a half-moon shape. Use a fork to crimp the edges and seal them tightly. - Bake the Pies:
Place the hand pies on the prepared baking sheet. Brush the tops with the beaten egg to give them a golden color when baked. Sprinkle with coarse sugar for a bit of extra sweetness and crunch, if desired. - Bake:
Bake in the preheated oven for 18-22 minutes, or until the crust is golden brown and the filling is bubbling. Let them cool for 5 minutes before serving.
Notes
- You can substitute fresh strawberries with frozen strawberries, but be sure to thaw and drain them before using.
- These hand pies can be stored in an airtight container at room temperature for up to 3 days.
