Description

This Strawberry Jello Pie is a sweet, creamy dessert with a burst of fresh strawberry flavor. The bright strawberry jello filling is complemented by a buttery graham cracker crust, making it the perfect treat for warm weather gatherings.

Ingredients

Scale

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 1 package (3 oz) strawberry Jello (or any flavor you prefer)
  • 1 cup boiling water
  • 1 cup cold water
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup whipped topping (or homemade whipped cream)

For Garnish (Optional):

  • Fresh strawberries, sliced
  • Extra whipped topping

Instructions

  1. Make the Crust:

    • Preheat the oven to 350°F (175°C).
    • In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until all the crumbs are evenly coated.
    • Press the mixture into the bottom and up the sides of a 9-inch pie dish.
    • Bake the crust in the preheated oven for about 8-10 minutes, or until golden brown. Remove from the oven and let it cool completely.
  2. Prepare the Strawberry Jello:

    • In a medium bowl, dissolve the strawberry Jello in 1 cup of boiling water. Stir for about 2 minutes until the Jello is fully dissolved.
    • Add 1 cup of cold water to the Jello mixture and stir to combine. Allow it to cool at room temperature for about 20-30 minutes, or until it begins to thicken slightly (it should still be pourable but thickened).
  3. Prepare the Filling:

    • In a separate bowl, beat the softened cream cheese with powdered sugar until smooth and creamy.
    • Gradually add the cooled Jello mixture to the cream cheese, mixing until fully combined and smooth.
    • Gently fold in the whipped topping or homemade whipped cream. Be careful not to deflate the whipped cream as you mix it in.
  4. Assemble the Pie:

    • Pour the strawberry Jello filling into the cooled graham cracker crust. Smooth the top with a spatula.
    • Refrigerate the pie for at least 4 hours, or until the filling is set and firm.
  5. Serve:

    • Before serving, garnish the pie with fresh strawberry slices and extra whipped topping if desired.
    • Slice and enjoy the refreshing, creamy strawberry goodness!

Notes

  • Make-Ahead: This pie can be made the day before and stored in the refrigerator, making it a perfect dessert for parties or gatherings.
  • Variation: You can substitute the strawberry Jello with raspberry, blueberry, or any other flavor you prefer for a different fruity twist.

  • Crust Options: If you want a different crust, you can use a pre-made pie crust, or even a cookie crust made from crushed vanilla wafers or Oreos for added flavor.
