- 1/4 cup vegetable oil
- 2 large eggs
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350ยฐF (175ยฐC). Line a baking sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine the strawberry cake mix, vegetable oil, eggs, lemon zest, and lemon juice. Stir until fully combined and a dough forms.
- Use a spoon or cookie scoop to portion out the dough into 1-inch balls. Roll each ball in powdered sugar to coat it evenly.
- Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 8-10 minutes or until the edges are set and the tops are slightly cracked.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
