Ingredients
Scale
For the Cake:
- 1 box (15.25 oz) strawberry cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- Zest of 1 lime
- 1/4 cup fresh lime juice
- 1 cup fresh strawberries, finely chopped (or pureed for a smoother texture)
For the Limeade Frosting:
- 1/2 cup unsalted butter, softened
- 4 oz cream cheese, softened
- 3–4 cups powdered sugar (adjust for consistency)
- 1/4 cup fresh lime juice
- Zest of 1 lime
- 1 tsp vanilla extract
- Pinch of salt
- Fresh strawberries, sliced (optional, for garnish)
Instructions
- Prepare the Cake:
- Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a large mixing bowl, combine the strawberry cake mix, water, vegetable oil, and eggs. Beat the mixture with an electric mixer on medium speed for 2-3 minutes until smooth.
- Add the lime zest, lime juice, and chopped fresh strawberries to the batter. Mix gently until evenly distributed.
- Divide the batter evenly between the two prepared cake pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Prepare the Limeade Frosting:
- In a medium bowl, beat together the softened butter and cream cheese until smooth and creamy.
- Gradually add powdered sugar, one cup at a time, and beat until smooth and fluffy.
- Add the fresh lime juice, lime zest, vanilla extract, and a pinch of salt. Mix until well combined. If the frosting is too thick, add a tablespoon of milk to thin it out.
- Assemble the Cake:
- Once the cakes have cooled completely, place one layer on a serving platter. Spread a generous layer of limeade frosting over the top.
- Place the second cake layer on top and frost the entire cake with the remaining frosting.
- Garnish with fresh strawberry slices or extra lime zest, if desired.
- Serve and Enjoy:
- Slice and enjoy the refreshing flavors of this light and delicious Strawberry Limeade Cake! It’s perfect for special occasions like Valentine’s Day or any sweet celebration.
Notes
- For extra flavor, you can drizzle a little strawberry syrup or jam between the cake layers before frosting.
- If you want a stronger lime flavor, you can increase the amount of lime juice or zest in the frosting.
- This cake can be stored in the refrigerator for up to 3 days. Bring it to room temperature before serving for the best texture.
