- Tartlets:
- Store-bought or pre-made pie dough, enough for 2 pie crusts
- Strawberry Mousse:
- 2 cups chopped fresh strawberries
- 1 tablespoon lemon juice
- 1 tablespoon unflavored gelatin
- 8 ounces mascarpone cheese
- 1/2 cup granulated sugar
- 2 cups whipping cream
- 1 teaspoon vanilla extract
- Fresh strawberries for garnish
- Mint for garnish
Instructions
- Preheat oven: Preheat oven to 400°F.
- Prepare tart shells: Roll out pie dough to an 1/8 inch thickness. Cut out 5-inch dough circles and fit into tart or mini pie plates. Line with parchment paper and fill with pie weights. Bake for 12-15 minutes. Remove pie weights and bake for an additional 4-5 minutes until golden brown. Cool completely.
- Make strawberry puree: Place chopped strawberries and lemon juice in a blender or food processor. Blend until smooth.
- Bloom gelatin: In a medium saucepan, heat strawberry puree and gelatin over medium-high heat until gelatin dissolves.
- Cool strawberry mixture: Remove from heat and let cool to room temperature.
- Combine mascarpone and sugar: Add mascarpone cheese and 1/4 cup granulated sugar to the cooled strawberry mixture. Fold until combined.
- Whip cream: In a separate bowl, whip 1 cup whipping cream and 1/2 teaspoon vanilla extract until stiff peaks form.
- Combine mixtures: Gently fold whipped cream into the strawberry mascarpone mixture.
- Fill tartlets: Fill cooled tart shells with strawberry mousse.
- Garnish and serve: Garnish with fresh strawberries and mint. Refrigerate for at least 3 hours before serving.

Ensure the tart shells are completely cooled before adding the mousse to prevent it from melting.
