Description

Delightfully creamy and refreshing, these Strawberry Mousse Tartlets feature a crispy tart shell filled with a luscious strawberry mousse made from fresh strawberries and mascarpone cheese. Perfect for any occasion, they are both visually appealing and delicious!

  • Tartlets:
    • Store-bought or pre-made pie dough, enough for 2 pie crusts
  • Strawberry Mousse:
    • 2 cups chopped fresh strawberries
    • 1 tablespoon lemon juice
    • 1 tablespoon unflavored gelatin
    • 8 ounces mascarpone cheese
    • 1/2 cup granulated sugar
    • 2 cups whipping cream
    • 1 teaspoon vanilla extract
    • Fresh strawberries for garnish
    • Mint for garnish

Instructions

  • Preheat oven: Preheat oven to 400°F.
  • Prepare tart shells: Roll out pie dough to an 1/8 inch thickness. Cut out 5-inch dough circles and fit into tart or mini pie plates. Line with parchment paper and fill with pie weights. Bake for 12-15 minutes. Remove pie weights and bake for an additional 4-5 minutes until golden brown. Cool completely.
  • Make strawberry puree: Place chopped strawberries and lemon juice in a blender or food processor. Blend until smooth.
  • Bloom gelatin: In a medium saucepan, heat strawberry puree and gelatin over medium-high heat until gelatin dissolves.
  • Cool strawberry mixture: Remove from heat and let cool to room temperature.
  • Combine mascarpone and sugar: Add mascarpone cheese and 1/4 cup granulated sugar to the cooled strawberry mixture. Fold until combined.
  • Whip cream: In a separate bowl, whip 1 cup whipping cream and 1/2 teaspoon vanilla extract until stiff peaks form.
  • Combine mixtures: Gently fold whipped cream into the strawberry mascarpone mixture.
  • Fill tartlets: Fill cooled tart shells with strawberry mousse.
  • Garnish and serve: Garnish with fresh strawberries and mint. Refrigerate for at least 3 hours before serving.

Notes

Ensure the tart shells are completely cooled before adding the mousse to prevent it from melting.
