Description

Strawberry Pie is a sweet, refreshing dessert featuring a flaky pie crust filled with a luscious, sweetened strawberry filling. The vibrant fresh strawberries are complemented by a smooth, glossy glaze, making it the perfect treat for any occasion.

Ingredients

Scale
  • For the crust:
  • 1 package refrigerated pie crusts (or homemade pie crust)
  • 1 tbsp granulated sugar (optional, for sprinkling on the crust)
  • For the filling:
  • 1 1/2 lbs fresh strawberries, hulled and halved
  • 3/4 cup granulated sugar
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 1 cup water
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • For the glaze:
  • 1/4 cup strawberry jam or jelly
  • 1 tbsp water

Instructions

  1. Preheat your oven to 375°F (190°C). Roll out the pie crusts and fit them into a 9-inch pie dish. Trim the edges and crimp to form a decorative border. If desired, sprinkle a bit of sugar on the crust for added sweetness.
  2. Prick the bottom of the crust with a fork and bake for 10-12 minutes, or until lightly golden. Remove from the oven and set aside to cool.
  3. In a saucepan, combine the sugar, cornstarch, and salt. Gradually add the water, whisking until smooth. Bring to a simmer over medium heat, stirring constantly, until the mixture thickens and becomes glossy (about 5-7 minutes).
  4. Remove the saucepan from the heat and stir in the lemon juice and vanilla extract. Let the mixture cool slightly.
  5. In a large bowl, gently toss the halved strawberries with the cooled sugar mixture, ensuring all the strawberries are coated.
  6. Pour the strawberry filling into the cooled pie crust, spreading the berries evenly across the pie.
  7. In a small bowl, microwave the strawberry jam with the water for about 20-30 seconds, stirring until smooth. Brush the glaze over the strawberries for a beautiful, glossy finish.
  8. Chill the pie in the refrigerator for at least 3 hours or until set. Serve chilled and enjoy!

Notes

  • For an extra touch of flavor, you can add a teaspoon of cinnamon or nutmeg to the filling mixture.
  • If you prefer a homemade crust, make sure to pre-bake it until golden and cool before adding the filling.
  • This pie works best with fresh, ripe strawberries for the best flavor and texture. Frozen strawberries may release too much moisture.
  • For a creamy variation, consider adding a layer of sweetened whipped cream or cream cheese at the base of the pie crust before adding the filling.
