Description
Strawberry Pie is a sweet, refreshing dessert featuring a flaky pie crust filled with a luscious, sweetened strawberry filling. The vibrant fresh strawberries are complemented by a smooth, glossy glaze, making it the perfect treat for any occasion.
Ingredients
Scale
- For the crust:
- 1 package refrigerated pie crusts (or homemade pie crust)
- 1 tbsp granulated sugar (optional, for sprinkling on the crust)
- For the filling:
- 1 1/2 lbs fresh strawberries, hulled and halved
- 3/4 cup granulated sugar
- 2 tbsp cornstarch
- 1/4 tsp salt
- 1 cup water
- 1 tbsp lemon juice
- 1/2 tsp vanilla extract
- For the glaze:
- 1/4 cup strawberry jam or jelly
- 1 tbsp water
Instructions
- Preheat your oven to 375°F (190°C). Roll out the pie crusts and fit them into a 9-inch pie dish. Trim the edges and crimp to form a decorative border. If desired, sprinkle a bit of sugar on the crust for added sweetness.
- Prick the bottom of the crust with a fork and bake for 10-12 minutes, or until lightly golden. Remove from the oven and set aside to cool.
- In a saucepan, combine the sugar, cornstarch, and salt. Gradually add the water, whisking until smooth. Bring to a simmer over medium heat, stirring constantly, until the mixture thickens and becomes glossy (about 5-7 minutes).
- Remove the saucepan from the heat and stir in the lemon juice and vanilla extract. Let the mixture cool slightly.
- In a large bowl, gently toss the halved strawberries with the cooled sugar mixture, ensuring all the strawberries are coated.
- Pour the strawberry filling into the cooled pie crust, spreading the berries evenly across the pie.
- In a small bowl, microwave the strawberry jam with the water for about 20-30 seconds, stirring until smooth. Brush the glaze over the strawberries for a beautiful, glossy finish.
- Chill the pie in the refrigerator for at least 3 hours or until set. Serve chilled and enjoy!
Notes
- For an extra touch of flavor, you can add a teaspoon of cinnamon or nutmeg to the filling mixture.
- If you prefer a homemade crust, make sure to pre-bake it until golden and cool before adding the filling.
- This pie works best with fresh, ripe strawberries for the best flavor and texture. Frozen strawberries may release too much moisture.
- For a creamy variation, consider adding a layer of sweetened whipped cream or cream cheese at the base of the pie crust before adding the filling.
