Description

A sweet and tangy dressing made with fresh strawberries, honey, and a hint of poppyseeds. This vibrant dressing is perfect for drizzling over salads, particularly those with greens, nuts, and fruit.

Ingredients

Scale
  • 1 cup fresh strawberries, hulled
  • 1/4 cup apple cider vinegar
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1 tablespoon poppyseeds
  • Salt and pepper to taste

Instructions

  1. In a blender or food processor, combine the strawberries, apple cider vinegar, honey, olive oil, and Dijon mustard.
  2. Blend until smooth and well combined.
  3. Stir in the poppyseeds and season with salt and pepper to taste.
  4. Pour into a jar or bottle and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
  5. Shake well before using. Drizzle over salads, especially those with mixed greens, nuts, and fruit, for a refreshing touch.

Notes

  • This dressing can be stored in an airtight container in the refrigerator for up to 1 week.
  • If you prefer a smoother dressing, strain the poppyseeds out before serving, although they add a nice texture and flavor.
  • For a sweeter dressing, you can add more honey or a splash of maple syrup.
