Instructions

  1. Preheat & Prep:
    • Preheat your oven to 325°F (163°C). Line a muffin tin with cupcake liners.
  2. Make the Crust:
    • In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture is well combined.
    • Spoon about 1 tablespoon of the crust mixture into each muffin cup and press it down to form a firm base.
    • Bake for 8-10 minutes, then remove from the oven and allow to cool while you prepare the filling.
  3. Prepare the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese with sugar until smooth and creamy.
    • Add the eggs, one at a time, beating well after each addition.
    • Mix in the vanilla extract, rose water, and sour cream.
    • Spoon the cheesecake filling evenly over the crusts, filling each muffin cup nearly to the top.
    • Bake for 18-22 minutes or until the center is set and a toothpick inserted comes out clean.
    • Let the cheesecakes cool to room temperature, then refrigerate for at least 2 hours or until fully chilled.
  4. Prepare the Strawberry Compote:
    • In a small saucepan, combine the chopped strawberries, sugar, lemon juice, and vanilla extract.
    • Cook over medium heat, stirring occasionally, until the strawberries break down and the mixture thickens, about 8-10 minutes.
    • Remove from heat and let it cool to room temperature.
  5. Assemble the Cheesecakes:
    • Once the cheesecakes are chilled, top each one with a spoonful of the strawberry compote.
    • Optionally, garnish with rose petals or additional chopped strawberries for a decorative touch.
