Description

Strawberry Shortcake Cheesecake Cups are layered dessert cups filled with buttery golden cake crumbs, creamy no-bake cheesecake filling, and fresh strawberries. These individual parfait-style treats are bursting with sweet flavor and perfect for summer gatherings or anytime you need a beautiful, easy dessert.

Ingredients

Scale
  • 1 cup crushed golden Oreos or vanilla shortbread cookies
  • 2 tbsp melted butter
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1/2 cup diced fresh strawberries
  • 1/4 cup strawberry jam or sauce
  • Extra crushed cookies and sliced strawberries for topping

Instructions

  1. In a bowl, combine crushed cookies and melted butter. Mix until crumbs are evenly coated.
  2. In a large bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth.
  3. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture to make a fluffy cheesecake filling.
  4. In small cups or jars, layer 1–2 tablespoons of cookie crumbs, followed by a layer of cheesecake filling, a spoonful of diced strawberries, and a drizzle of strawberry jam or sauce.
  5. Repeat the layers until the cups are filled. Top with extra cookie crumbs and a sliced strawberry.
  6. Chill for at least 1 hour before serving to let the flavors set.

Notes

  • You can substitute graham crackers or sponge cake crumbs for the cookie base.
  • Add a splash of lemon juice to the strawberries for a tangy twist.
  • These cups can be made up to 1 day in advance and stored covered in the fridge.
  • Use a piping bag for neat, clean layers of cheesecake filling.
