Ingredients
Scale
- 1 cup crushed golden Oreos or vanilla shortbread cookies
- 2 tbsp melted butter
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 1/2 cup diced fresh strawberries
- 1/4 cup strawberry jam or sauce
- Extra crushed cookies and sliced strawberries for topping
Instructions
- In a bowl, combine crushed cookies and melted butter. Mix until crumbs are evenly coated.
- In a large bowl, beat softened cream cheese, powdered sugar, and vanilla until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold into the cream cheese mixture to make a fluffy cheesecake filling.
- In small cups or jars, layer 1–2 tablespoons of cookie crumbs, followed by a layer of cheesecake filling, a spoonful of diced strawberries, and a drizzle of strawberry jam or sauce.
- Repeat the layers until the cups are filled. Top with extra cookie crumbs and a sliced strawberry.
- Chill for at least 1 hour before serving to let the flavors set.
Notes
- You can substitute graham crackers or sponge cake crumbs for the cookie base.
- Add a splash of lemon juice to the strawberries for a tangy twist.
- These cups can be made up to 1 day in advance and stored covered in the fridge.
- Use a piping bag for neat, clean layers of cheesecake filling.
