For the cookies:

  • 1 ¾ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder

  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp strawberry puree (about 34 fresh strawberries blended)
  • ¼ cup granulated sugar (for rolling)

Instructions

  1. Preheat the oven:
    Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the dough:
    In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. In a separate large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy. Add the egg and vanilla extract, and mix until combined. Add the strawberry puree and mix until smooth.
  3. Combine wet and dry ingredients:
    Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.
  4. Shape the cookies:
    Roll the dough into 1-inch balls. Roll each ball in the ¼ cup of granulated sugar to coat. Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  5. Flatten the cookies:
    Use the bottom of a glass or your fingers to gently press down on each dough ball, slightly flattening them. This will help the cookies spread evenly as they bake.
  6. Bake the cookies:
    Bake for 8-10 minutes, or until the edges are lightly golden but the centers are still soft. Keep an eye on them, as they bake quickly.
  7. Cool and serve:
    Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Serve and enjoy these sweet, strawberry-infused treats!
