For the cookies:
- 1 ¾ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 tbsp strawberry puree (about 3–4 fresh strawberries blended)
- ¼ cup granulated sugar (for rolling)
Instructions
- Preheat the oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat. - Make the dough:
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. In a separate large bowl, cream together the softened butter and 1 cup of sugar until light and fluffy. Add the egg and vanilla extract, and mix until combined. Add the strawberry puree and mix until smooth. - Combine wet and dry ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix. - Shape the cookies:
Roll the dough into 1-inch balls. Roll each ball in the ¼ cup of granulated sugar to coat. Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart. - Flatten the cookies:
Use the bottom of a glass or your fingers to gently press down on each dough ball, slightly flattening them. This will help the cookies spread evenly as they bake. - Bake the cookies:
Bake for 8-10 minutes, or until the edges are lightly golden but the centers are still soft. Keep an eye on them, as they bake quickly. - Cool and serve:
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Serve and enjoy these sweet, strawberry-infused treats!
Notes
- For extra strawberry flavor, you can add a few tablespoons of freeze-dried strawberry powder to the dough.
