Description

A delightful twist on the classic tiramisu, this Strawberry Tiramisu features layers of creamy mascarpone filling, sweet strawberry jam, and ladyfingers soaked in a luscious strawberry syrup. Perfect for summer gatherings or any sweet occasion!

For the Strawberry Jam:

  • 4 cups quartered strawberries
  • 1 cup granulated sugar
  • 4 tablespoons lemon juice

For the Strawberry Syrup:

  • ⅓ cup strawberry jam
  • 1 cup strawberry liqueur (or strawberry juice, orange juice, or Grand Marnier)

For the Mascarpone Filling:

  • 2 cups mascarpone cheese
  • ½ cup powdered sugar
  • 3 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1¾ cups heavy whipping cream

To Assemble:

  • ¾ cup chopped strawberries
  • 28 ladyfinger cookies

For the Top:

  • ½ cup heavy whipping cream
  • 1 cup freeze-dried strawberries

Instructions

  • Make the Strawberry Jam: Combine strawberries, sugar, and lemon juice in a saucepan. Cook over medium-high heat until boiling, then reduce heat and cook until thickened. Remove from heat, cool, and refrigerate.
  • Prepare the Mascarpone Filling: Beat mascarpone cheese with ¼ cup powdered sugar, lemon juice, and vanilla extract. Whip heavy cream with remaining ¼ cup powdered sugar. Gently fold whipped cream into mascarpone mixture.
  • Prepare the Strawberry Syrup: Mix strawberry jam with strawberry liqueur.
  • Assemble the Tiramisu: Dip ladyfingers in strawberry syrup and layer in a pan. Spread half the mascarpone filling, drizzle with strawberry jam, and sprinkle with chopped strawberries. Repeat layers. Refrigerate overnight.
  • Before Serving: Whip heavy cream. Pulse freeze-dried strawberries for a powder. Sift powder over tiramisu. Garnish with fresh strawberries.

Notes

  • Allow the tiramisu to chill overnight for the best flavor and texture.
  • You can adjust the sweetness by adding more or less sugar in the jam and mascarpone filling.
