Description

Street Corn Cheeseburger Sliders combine the best of both worlds: juicy cheeseburger sliders and the rich, flavorful elements of Mexican street corn. With seasoned beef patties, creamy cheese, and a tangy street corn topping, these sliders are perfect for a fun, flavor-packed meal.

  • For the Sliders:
  • 1 lb ground beef
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 8 slider buns
  • 4 slices cheddar cheese, cut in half to fit the sliders
  • 2 tablespoons butter, melted (for brushing the buns)
  • For the Street Corn Topping:
  • 2 cups fresh or frozen corn kernels
  • 1 tablespoon butter
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon smoked paprika
  • 1/4 cup crumbled cotija cheese (or feta cheese as a substitute)
  • 1 tablespoon chopped cilantro
  • Optional: extra lime wedges for garnish

Instructions

  1. Preheat your grill or stovetop skillet over medium-high heat.
  2. In a mixing bowl, combine the ground beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until just combined, being careful not to overwork the meat.
  3. Form the beef mixture into small slider patties (about 8-10 depending on your preference). Make a small indent in the center of each patty with your thumb to help them cook evenly.
  4. Grill or cook the patties on the skillet for 3-4 minutes per side, or until they reach your desired level of doneness. During the last minute of cooking, place a half slice of cheddar cheese on each patty and cover to melt the cheese.
  5. While the patties cook, prepare the street corn topping. In a medium skillet, melt the butter over medium heat. Add the corn kernels and sauté for about 5 minutes, until the corn is lightly browned and cooked through.
  6. Remove the corn from the heat and let it cool slightly. In a bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, and smoked paprika. Add the sautéed corn to the bowl and stir to combine.
  7. To assemble the sliders, brush the inside of the slider buns with melted butter and toast them lightly on the grill or skillet for about 1-2 minutes, until golden brown.
  8. Place the cooked patties with melted cheese onto the bottom buns. Top with a generous spoonful of the street corn mixture, and garnish with crumbled cotija cheese and chopped cilantro.
  9. Place the top buns on the sliders and serve with lime wedges for an added zesty kick!

  • For a spicier version, add a pinch of cayenne pepper or hot sauce to the street corn topping.
  • These sliders pair well with a side of tortilla chips or a fresh salad.
