Street Corn Cheeseburger Sliders combine the best of both worlds: juicy cheeseburger sliders and the rich, flavorful elements of Mexican street corn. With seasoned beef patties, creamy cheese, and a tangy street corn topping, these sliders are perfect for a fun, flavor-packed meal.

- For the Sliders:
- 1 lb ground beef
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
- 8 slider buns
- 4 slices cheddar cheese, cut in half to fit the sliders
- 2 tablespoons butter, melted (for brushing the buns)
- For the Street Corn Topping:
- 2 cups fresh or frozen corn kernels
- 1 tablespoon butter
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon lime juice
- 1/4 teaspoon chili powder
- 1/4 teaspoon smoked paprika
- 1/4 cup crumbled cotija cheese (or feta cheese as a substitute)
- 1 tablespoon chopped cilantro
- Optional: extra lime wedges for garnish
Instructions
- Preheat your grill or stovetop skillet over medium-high heat.
- In a mixing bowl, combine the ground beef with garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until just combined, being careful not to overwork the meat.
- Form the beef mixture into small slider patties (about 8-10 depending on your preference). Make a small indent in the center of each patty with your thumb to help them cook evenly.
- Grill or cook the patties on the skillet for 3-4 minutes per side, or until they reach your desired level of doneness. During the last minute of cooking, place a half slice of cheddar cheese on each patty and cover to melt the cheese.
- While the patties cook, prepare the street corn topping. In a medium skillet, melt the butter over medium heat. Add the corn kernels and sauté for about 5 minutes, until the corn is lightly browned and cooked through.
- Remove the corn from the heat and let it cool slightly. In a bowl, mix together the mayonnaise, sour cream, lime juice, chili powder, and smoked paprika. Add the sautéed corn to the bowl and stir to combine.
- To assemble the sliders, brush the inside of the slider buns with melted butter and toast them lightly on the grill or skillet for about 1-2 minutes, until golden brown.
- Place the cooked patties with melted cheese onto the bottom buns. Top with a generous spoonful of the street corn mixture, and garnish with crumbled cotija cheese and chopped cilantro.
- Place the top buns on the sliders and serve with lime wedges for an added zesty kick!
Notes
- For a spicier version, add a pinch of cayenne pepper or hot sauce to the street corn topping.
- These sliders pair well with a side of tortilla chips or a fresh salad.
