Ingredients

  • 2 cups frozen corn, thawed

  • 1 cup mayonnaise

  • 1 cup sour cream

  • 1 cup shredded Mexican cheese blend

  • ½ cup grated Parmesan cheese

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • 1 teaspoon garlic powder

  • ½ teaspoon smoked paprika

  • Salt and pepper to taste

  • 1 cup crushed tortilla chips (for topping)

  • 1 tablespoon chopped cilantro (optional, for garnish)

  • 1 tablespoon lime juice (optional, for garnish)


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch casserole dish.

  2. Mix Ingredients: In a large bowl, combine the shredded chicken, thawed corn, mayonnaise, sour cream, Mexican cheese blend, Parmesan cheese, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Stir until well combined.

  3. Assemble Casserole: Transfer the mixture into the prepared casserole dish and spread evenly.
