Description

Delicious stuffed bell peppers filled with a savory mixture of seasoned ground meat, rice, vegetables, and melted cheese. A comforting and colorful meal perfect for any occasion.


Ingredients

  • 4 large bell peppers (any color), tops cut off and seeds removed
  • 1 lb ground beef or turkey
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (canned or fresh)
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  3. Add ground beef (or turkey), cook until browned. Drain excess fat.
  4. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Cook for 2–3 minutes until heated through.
  5. Place bell peppers upright in a baking dish.
  6. Fill each pepper with the meat and rice mixture.
  7. Top each stuffed pepper with shredded cheese.
  8. Cover dish with foil and bake for 30 minutes.
  9. Remove foil and bake for another 10 minutes until cheese is melted and bubbly.
  10. Let cool for a few minutes before serving.

  • For a vegetarian option, substitute meat with cooked lentils or beans.
  • Add chopped mushrooms or zucchini to the filling for extra veggies.
  • Use quinoa instead of rice for a healthier twist.
