Instructions
- Prepare the Chicken: Preheat your oven to 375°F (190°C). Pat the chicken breasts dry with a paper towel. Use a sharp knife to cut a slit on the side of each breast, creating a pocket.
- Make the Stuffing: In a small bowl, combine the mozzarella, sun-dried tomatoes, spinach, and cream cheese (if using). Mix well and season with a pinch of salt and pepper.
- Stuff the Chicken: Spoon the stuffing mixture into the pockets of each chicken breast. Secure the openings with toothpicks or kitchen twine.

- Bake: Transfer the chicken breasts to a baking dish and bake in the preheated oven for 20-25 minutes, or until the internal temperature reaches 165°F (75°C).
