Description

These delicious stuffed mashed potato nests are made with creamy mashed potatoes molded into little nests, filled with savory fillings like cheese, bacon, or vegetables. Perfect as a side dish or appetizer for any meal!


Ingredients

  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tablespoons unsalted butter
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon, crumbled (optional)
  • 1/4 cup green onions, chopped (optional)
  • 1/4 cup sour cream (optional)
  • 1 tablespoon olive oil
  • 1/2 cup panko breadcrumbs (optional for topping)
  • 1/4 cup fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a muffin tin or mini muffin tin.
  2. In a large pot, boil the cubed potatoes in salted water for about 10-15 minutes or until they are fork-tender. Drain and return the potatoes to the pot.
  3. Mash the potatoes with a potato masher or hand mixer until smooth. Add the milk, butter, salt, and pepper, and continue to mash until creamy.
  4. Stir in the shredded cheddar cheese and any additional fillings such as bacon, green onions, or sour cream (optional). Adjust seasoning with salt and pepper to taste.
  5. Using a spoon, scoop out portions of mashed potatoes and press them into the muffin tin cups, creating little nests with a well in the center. Make sure the edges are thick enough to hold the filling.
  6. If using, sprinkle panko breadcrumbs on top of each nest for added crunch.
  7. Drizzle a little olive oil over the top of each nest to help them brown and crisp up during baking.
  8. Bake for 15-20 minutes, or until the nests are golden brown and the edges are crispy.
  9. Remove from the oven and let cool for a few minutes before gently removing them from the muffin tin. Garnish with chopped fresh parsley, if desired.
  10. Serve warm as a side dish or appetizer. Enjoy!

  • For a vegetarian version, skip the bacon and add extra vegetables such as sautéed spinach, mushrooms, or peas.
