For the potato stacks:
- 4 large potatoes, peeled and sliced into 1/4-inch rounds
- 2 tablespoons butter, melted
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
For the filling:
- 1/2 pound ground beef or turkey
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1 cup fresh spinach, chopped
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
For garnish:
- Fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
- Toss potato slices with melted butter, salt, black pepper, and garlic powder. Arrange half of the slices on the baking sheet and bake for 15 minutes until slightly golden.
- In a skillet, cook ground beef over medium heat until browned. Drain excess fat, then season with salt, pepper, smoked paprika, and oregano. Stir in chopped spinach and cook for 2 minutes until wilted.
- Remove potato slices from the oven. Layer half with the cooked meat mixture and a sprinkle of mozzarella and parmesan cheese. Place another potato slice on top of each stack.
- Return to the oven and bake for another 10-15 minutes, until cheese melts and potatoes are golden brown.
- Garnish with fresh parsley and serve warm.
Notes
- You can substitute ground turkey for a leaner version.
- For extra flavor, try adding a drizzle of sour cream or a bit of hot sauce on top.
