Description

For the potato stacks:

  • 4 large potatoes, peeled and sliced into 1/4-inch rounds
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

For the filling:

  • 1/2 pound ground beef or turkey
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 cup fresh spinach, chopped
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup parmesan cheese, grated

For garnish:

  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking sheet.
  2. Toss potato slices with melted butter, salt, black pepper, and garlic powder. Arrange half of the slices on the baking sheet and bake for 15 minutes until slightly golden.
  3. In a skillet, cook ground beef over medium heat until browned. Drain excess fat, then season with salt, pepper, smoked paprika, and oregano. Stir in chopped spinach and cook for 2 minutes until wilted.
  4. Remove potato slices from the oven. Layer half with the cooked meat mixture and a sprinkle of mozzarella and parmesan cheese. Place another potato slice on top of each stack.
  5. Return to the oven and bake for another 10-15 minutes, until cheese melts and potatoes are golden brown.
  6. Garnish with fresh parsley and serve warm.

Notes

  • You can substitute ground turkey for a leaner version.
  • For extra flavor, try adding a drizzle of sour cream or a bit of hot sauce on top.
