- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup heavy cream
- 1/4 cup crushed graham crackers (optional for added texture)
Instructions
- Preheat the oven to 350°F (175°C). Grease or line a 9×9-inch baking pan with parchment paper.
- In a large mixing bowl, combine the sugar cookie mix, softened butter, egg, lemon zest, and lemon juice. Mix until smooth and dough forms.
- Press the cookie dough evenly into the bottom of the prepared pan, forming a thin crust layer.
- In a separate small bowl, whisk together powdered sugar, flour, baking powder, and salt. Stir in the heavy cream until the mixture is smooth and creamy.
- Pour the lemon cream mixture over the cookie dough crust, spreading it evenly.
- In another small bowl, combine granulated sugar and crushed graham crackers (optional) for the crumble topping. Sprinkle it over the lemon cream layer.
- Bake for 25-30 minutes, or until the top is golden and set.
- Let cool completely before cutting into squares. Serve chilled for the best texture and flavor.
