  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup heavy cream
  • 1/4 cup crushed graham crackers (optional for added texture)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a 9×9-inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the sugar cookie mix, softened butter, egg, lemon zest, and lemon juice. Mix until smooth and dough forms.
  3. Press the cookie dough evenly into the bottom of the prepared pan, forming a thin crust layer.
  4. In a separate small bowl, whisk together powdered sugar, flour, baking powder, and salt. Stir in the heavy cream until the mixture is smooth and creamy.
  5. Pour the lemon cream mixture over the cookie dough crust, spreading it evenly.
  6. In another small bowl, combine granulated sugar and crushed graham crackers (optional) for the crumble topping. Sprinkle it over the lemon cream layer.
