Description

These baked tiramisu donuts are light, moist, and infused with espresso flavor, then topped with a rich mascarpone glaze and a dusting of cocoa powder. A coffee lover’s dream in donut form!


Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/4 cup brewed espresso or strong coffee, cooled
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • Mascarpone Glaze:
  • 4 oz mascarpone cheese, softened
  • 1/2 cup powdered sugar
  • 12 tbsp milk
  • 1 tsp vanilla extract
  • Unsweetened cocoa powder, for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Grease a donut pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, whisk together sugars, yogurt, coffee, oil, egg, and vanilla extract until smooth.
  4. Gradually add dry ingredients to wet ingredients and mix until just combined.
  5. Spoon or pipe the batter into the prepared donut pan, filling each about 3/4 full.
  6. Bake for 10–12 minutes or until a toothpick inserted comes out clean.
  7. Let donuts cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze: Whisk mascarpone, powdered sugar, vanilla, and milk until smooth and creamy.
  9. Dip the tops of the cooled donuts into the glaze and dust with cocoa powder.
  10. Chill slightly to set the glaze, if desired, then serve.

Notes

  • Use cooled espresso to avoid curdling the batter.
  • Donuts are best enjoyed fresh but can be stored in the refrigerator for up to 3 days.
  • For stronger coffee flavor, brush cooled donuts with more espresso before glazing.
