  • 1 tablespoon olive oil
  • 1/2 lb Italian sausage, crumbled
  • 1/2 cup sliced pepperoni
  • 1/2 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can crushed tomatoes
  • 1/2 cup pizza sauce
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the tortellini according to package instructions, then drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add the crumbled sausage and cook until browned, breaking it apart as it cooks. Remove any excess grease.
  4. Add the diced bell peppers, onion, and garlic to the skillet. Cook for 3-4 minutes, or until the vegetables soften.
  5. Stir in the crushed tomatoes, pizza sauce, oregano, basil, and red pepper flakes (if using). Bring the mixture to a simmer and cook for 5-7 minutes, stirring occasionally.
  6. Add the cooked tortellini to the skillet and stir until evenly combined with the sauce. Transfer the mixture to the prepared baking dish.
  7. Top with shredded mozzarella and grated Parmesan cheese.
  8. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  9. Garnish with fresh basil or parsley if desired. Serve hot and enjoy!
