- 1 tablespoon olive oil
- 1/2 lb Italian sausage, crumbled
- 1/2 cup sliced pepperoni
- 1/2 red bell pepper, diced
- 1/2 green bell pepper, diced

- 2 cloves garlic, minced
- 1 (14.5 oz) can crushed tomatoes
- 1/2 cup pizza sauce
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon crushed red pepper flakes (optional)
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- Cook the tortellini according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the crumbled sausage and cook until browned, breaking it apart as it cooks. Remove any excess grease.
- Add the diced bell peppers, onion, and garlic to the skillet. Cook for 3-4 minutes, or until the vegetables soften.
- Stir in the crushed tomatoes, pizza sauce, oregano, basil, and red pepper flakes (if using). Bring the mixture to a simmer and cook for 5-7 minutes, stirring occasionally.
- Add the cooked tortellini to the skillet and stir until evenly combined with the sauce. Transfer the mixture to the prepared baking dish.
- Top with shredded mozzarella and grated Parmesan cheese.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Garnish with fresh basil or parsley if desired. Serve hot and enjoy!
