  • 1 lb smoked sausage, sliced
  • 2 lbs russet potatoes, peeled and diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Cajun seasoning (or to taste)
  • Salt and pepper to taste
  • 1/4 cup chicken broth or water (as needed for steaming)
  • Chopped green onions or parsley (for garnish)


Instructions

  1. Heat butter or oil in a large skillet over medium heat. Add sliced sausage and cook until browned on both sides. Remove and set aside.
  2. In the same skillet, add diced potatoes and cook for 10–12 minutes, stirring occasionally, until starting to soften and brown.
  3. Add diced peppers, onion, and garlic. Stir well and cook for another 5–7 minutes until vegetables are soft.
  4. Return sausage to the skillet. Add Cajun seasoning, salt, pepper, and a splash of chicken broth or water. Cover the skillet with a lid and let steam for 5–8 minutes, or until potatoes are fork-tender.
  5. Remove the lid, stir everything well, and let cook uncovered for 2–3 more minutes to allow excess liquid to evaporate and edges to crisp slightly.
  6. Garnish with chopped green onions or parsley and serve hot!
