- 1 small onion, diced
- 2 cloves garlic, minced
- 1/2 cup ketchup
- 2 tbsp brown sugar
- 1 tbsp yellow mustard
- 1 tbsp Worcestershire sauce
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- 1 large bag tortilla chips
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- Pickled jalapeños, sliced (optional)
- Diced tomatoes, chopped red onion, sour cream, and green onions for topping
Instructions
- Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
- In a skillet over medium heat, cook ground beef and diced onion until beef is browned and cooked through. Drain excess fat.
- Add garlic and cook for 1 minute. Stir in ketchup, brown sugar, mustard, Worcestershire sauce, chili powder, smoked paprika, salt, and pepper. Simmer for 5–7 minutes until thickened.
- Spread tortilla chips over the prepared baking sheet. Spoon sloppy joe mixture evenly over the chips.
- Sprinkle cheddar and mozzarella cheeses over the top. Add pickled jalapeños if using.
- Bake for 8–10 minutes or until cheese is melted and bubbly.
- Remove from oven and top with diced tomatoes, red onion, sour cream, and green onions. Serve immediately.

- Swap beef for ground turkey or plant-based crumbles for a lighter version.
