  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 large bag tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Pickled jalapeños, sliced (optional)
  • Diced tomatoes, chopped red onion, sour cream, and green onions for topping

Instructions

  1. Preheat oven to 375°F (190°C). Line a large baking sheet with parchment paper or foil for easy cleanup.
  2. In a skillet over medium heat, cook ground beef and diced onion until beef is browned and cooked through. Drain excess fat.
  3. Add garlic and cook for 1 minute. Stir in ketchup, brown sugar, mustard, Worcestershire sauce, chili powder, smoked paprika, salt, and pepper. Simmer for 5–7 minutes until thickened.
  4. Spread tortilla chips over the prepared baking sheet. Spoon sloppy joe mixture evenly over the chips.
  5. Sprinkle cheddar and mozzarella cheeses over the top. Add pickled jalapeños if using.
  6. Bake for 8–10 minutes or until cheese is melted and bubbly.
  7. Remove from oven and top with diced tomatoes, red onion, sour cream, and green onions. Serve immediately.

Notes

  • Swap beef for ground turkey or plant-based crumbles for a lighter version.
  • Want extra heat? Add hot sauce or use spicy shredded cheese.
