  • 4 cups fresh blackberries (or frozen, thawed)
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

For the Biscuit Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, cold and cut into cubes
  • 1/2 cup milk (or buttermilk for a richer flavor)
  • 1 teaspoon vanilla extract

For Serving:

 

  • Whipped cream or vanilla ice cream (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the blackberries, sugar, lemon juice, cornstarch, vanilla extract, and a pinch of salt. Stir gently to coat the berries, then set aside to let the mixture sit for 10 minutes.
  3. In a separate bowl, whisk together the flour, sugar, baking powder, and salt. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Pour in the milk and vanilla extract, stirring just until combined. The dough will be somewhat sticky.
  5. Pour the berry mixture into a greased 9-inch baking dish. Drop spoonfuls of the biscuit dough over the berries, spreading it out as evenly as possible.
  6. Bake for 35-40 minutes, or until the topping is golden brown and the berry filling is bubbling.
  7. Remove from the oven and let cool for a few minutes before serving.
  8. Serve warm, topped with whipped cream or a scoop of vanilla ice cream, if desired. Enjoy!

Notes

  • If fresh blackberries are unavailable, frozen blackberries work just as well.
