Description

These Sweet Blueberry Biscuits are a delightful treat, combining flaky biscuit texture with the sweetness of blueberries and a rich, creamy sauce. Perfect for breakfast or as a dessert, these biscuits are easy to make and sure to impress!

Biscuits:

  • 2 cups All-Purpose Flour
  • 1 Tb. baking powder
  • 1 ½ tsp salt
  • 3 Tb. sugar
  • 1 stick unsalted butter (VERY cold)
  • ¾ cup buttermilk (use enough until the dough is just barely wet enough)
  • 1 cup frozen blueberries
  • ½ stick melted salted butter

Sauce:

  • 1 cup powdered sugar
  • 3 Tb. milk (or more if not thin enough)
  • ½ tsp vanilla extract

Instructions

  • Cut butter into small pats and lay out on a cookie sheet lined in wax paper. Stick in the freezer for at least 10 minutes.
  • Prepare a cast iron skillet with a tiny amount of bacon grease, if available. (Easiest thing: fry one piece of bacon, wipe out the pan, and you’re good to go!) Preheat oven to 500°F (260°C).
  • Stir the sauce ingredients together (powdered sugar, milk, vanilla), ensuring the powdered sugar is completely dissolved.
  • Combine all dry ingredients (flour, baking powder, salt, sugar) in a bowl, then cut in the cold unsalted butter until it resembles pea-sized pieces.
  • Add buttermilk slowly until the dough separates from the sides of the bowl. Stir until just combined and roll it out onto a well-floured surface.
  • Prepare a large area for kneading and sprinkle with flour. Place the dough on the floured area, sprinkle some flour over it, and press the dough out to about ½-inch thickness.
  • Place blueberries over the dough, knead a couple of times, and flatten back out to about 1-inch thickness.
  • Place biscuits in a cast-iron skillet, ensuring they are touching.
  • Bake at 500°F (260°C) for about 10-12 minutes. Around 6-8 minutes in, brush the biscuits with melted salted butter.
  • When the tops are lightly browned and blueberries are bursting, remove from oven. The center will remain hot and continue cooking.

Notes

  • For best results, keep the butter very cold before cutting it into the dry ingredients.
  • Adjust the amount of buttermilk based on the moisture of the dough.
