  • For the Crust and Topping:

    • 2 1/2 cups all-purpose flour
    • 1 1/2 cups granulated sugar
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 cup unsalted butter, cold and cut into cubes
    • 1 large egg
    • 1 teaspoon vanilla extract

 

  • For the Cherry Filling:

    • 2 cups fresh or frozen cherries, pitted and halved
    • 1/2 cup granulated sugar
    • 1 tablespoon cornstarch
    • 1 tablespoon lemon juice
    • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven and prepare pan:

    • Preheat your oven to 375°F (190°C). Grease or line a 9×13-inch baking dish with parchment paper for easy removal.
  2. Prepare the crust and topping:

    • In a large bowl, combine the flour, sugar, baking powder, and salt.
    • Add the cold, cubed butter and use a pastry cutter or your hands to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
    • Add the egg and vanilla extract, mixing until just combined. The dough should be crumbly but hold together when pressed.
  3. Press the dough into the pan:

    • Press about 2/3 of the dough mixture evenly into the bottom of the prepared baking dish to form the base crust. Use a spatula to smooth it out.
  4. Make the cherry filling:

    • In a medium saucepan, combine the cherries, sugar, cornstarch, lemon juice, and vanilla extract.
    • Cook over medium heat, stirring occasionally, until the mixture comes to a boil and thickens (about 5-7 minutes).
    • Once the filling is thickened and bubbly, remove it from the heat and let it cool slightly.
  5. Assemble the bars:

    • Spread the cherry filling evenly over the prepared crust.
    • Crumble the remaining dough over the cherry filling to create a crumbly topping.
  6. Bake:

    • Bake for 35-40 minutes, or until the crust is golden and the cherry filling is bubbling.
    • Allow the bars to cool completely in the pan before cutting into squares.
  7. Serve and enjoy:

    • Once the bars are cooled, slice them into squares or rectangles. Enjoy as is, or dust with powdered sugar for an extra touch of sweetness.

Notes

  • For a smoother filling, you can mash some of the cherries before cooking, especially if you’re using frozen cherries.
  • These bars are also delicious when served with a scoop of vanilla ice cream or whipped cream on top.
