Preheat oven and prepare pan:
- Preheat your oven to 375°F (190°C). Grease or line a 9×13-inch baking dish with parchment paper for easy removal.

Prepare the crust and topping:
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- Add the cold, cubed butter and use a pastry cutter or your hands to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Add the egg and vanilla extract, mixing until just combined. The dough should be crumbly but hold together when pressed.
