Ingredients
Scale
- 4 boneless, skinless chicken breasts (or thighs)
- 1/4 cup sweet chili sauce
- 2 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon fresh lime juice
- 1 teaspoon sesame oil
- Salt and black pepper, to taste
- 1 tablespoon vegetable oil (for grilling)
- Optional: chopped cilantro or green onions for garnish
- Optional: sesame seeds for garnish
Instructions
- In a bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, honey, garlic, lime juice, sesame oil, salt, and black pepper to make the marinade.
- Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, making sure it’s fully coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes (up to 4 hours) to marinate.
- Preheat the grill to medium-high heat and brush the grill grates with vegetable oil to prevent sticking.
- Remove the chicken from the marinade, discarding the marinade. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred and cooked through.
- If desired, brush the chicken with a little extra sweet chili sauce during the last minute of grilling to create a glossy glaze.
- Remove the chicken from the grill and let it rest for a few minutes before serving.
- Garnish with chopped cilantro, green onions, and sesame seeds, if desired, and serve hot with your favorite sides.
Notes
- You can substitute chicken thighs for breasts for a juicier, more flavorful option.
- If you prefer a spicier glaze, add more chili flakes or a bit of hot sauce to the marinade.
- For an extra smoky flavor, consider grilling the chicken over indirect heat or adding wood chips to the grill.
- This chicken pairs perfectly with rice, grilled vegetables, or a fresh salad.
- Leftover chicken can be stored in the fridge and used in salads, wraps, or sandwiches.
