Sweet Corn Fritter Stacks with Honey Butter combine crispy, golden corn fritters stacked high and topped with a rich, melt-in-your-mouth honey butter. Perfect as an appetizer, snack, or side dish!

- For the corn fritters:
- 1 1/2 cups corn kernels (fresh, frozen, or canned, drained)
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 1 large egg
- 1/2 cup milk
- 2 tbsp sugar
- 1 tbsp chopped fresh parsley (optional)
- 1/2 cup finely chopped green onions (optional)
- Vegetable oil for frying
- For the honey butter:
- 1/2 cup unsalted butter, softened
- 3 tbsp honey
- 1/2 tsp cinnamon (optional, for extra warmth)
- Pinch of salt
Instructions
- For the fritters: In a large bowl, whisk together the flour, baking powder, salt, pepper, paprika, and sugar.
- In a separate bowl, whisk the egg and milk together. Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the corn kernels, chopped green onions, and parsley (if using).
- Heat about 1/4 inch of vegetable oil in a large skillet or frying pan over medium heat.
- Once the oil is hot, drop spoonfuls of the fritter batter into the pan, pressing them down slightly with the back of the spoon to form small, round fritters.
- Fry for about 2-3 minutes on each side, or until golden brown and crispy. Remove from the skillet and place them on a paper towel-lined plate to drain excess oil.
- For the honey butter: In a small bowl, beat together the softened butter, honey, cinnamon (if using), and salt until smooth and well combined.
- To assemble: Stack the fritters in groups of 2-3 on a serving platter. Drizzle each stack with the honey butter or serve the honey butter on the side for dipping.
- Serve immediately while the fritters are warm and crispy. Garnish with extra chopped parsley or green onions if desired.
Notes
- For extra flavor, you can add a little bit of shredded cheddar cheese to the fritter batter.
- If you don’t have fresh corn, frozen or canned corn will work just fine. Just make sure to drain it well.
- Leftover fritters can be stored in the fridge and reheated in a toaster oven or skillet to retain their crispiness.
- The honey butter can also be made ahead of time and stored in the fridge.
