  • 1 ½ teaspoons McCormick Pure Vanilla Extract
  • ¼ cup all-purpose flour
  • One 20-ounce can pineapple chunks, drained (fresh or frozen could likely be substituted)

Instructions

  • Preheat the Oven: Preheat oven to 350°F (175°C) and line an 8×8-inch pan with aluminum foil. Spray with cooking spray; set aside.
  • Make the Crust: In a large bowl, combine the butter, 1 cup flour, ½ cup sugar, and optional salt. Using two forks or a pastry cutter, cut the butter into the dry ingredients until a sandy mixture with pea-sized buttery bits forms.
    • Reserve ¾ cup of this mixture; set aside.
    • Transfer the remaining mixture into the prepared pan and press evenly to form a crust.
    • Bake for 10 minutes.
  • Make the Filling: In the same bowl, add the egg, ½ cup sugar, sour cream, vanilla extract, and ¼ cup flour. Whisk until smooth; set aside.
    • Remove the crust from the oven and top evenly with pineapple chunks.
    • Carefully pour the sour cream mixture over the pineapple, ensuring it fills the corners.
    • Sprinkle the reserved crust mixture over the top to create a crumble topping.
  • Bake: Bake for about 35 minutes, or until edges and top are set.
    • Place the pan on a wire rack and allow the bars to cool for at least 1 hour before slicing and serving.

Notes

For a vegetarian option, substitute the cream of chicken soup with cream of mushroom soup.
