  • 1/2 teaspoon nutmeg (optional)
  • 1 1/2 cups mini marshmallows

Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Prepare the Sweet Potatoes: Arrange the sweet potato rounds on the baking sheet. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat evenly.
  • Roast the Sweet Potatoes: Roast in the preheated oven for 20-25 minutes, flipping halfway through, until the sweet potatoes are tender and slightly crispy on the edges.
  • Prepare Pecan Topping: In a small saucepan, heat the maple syrup over medium heat. Stir in the pecan halves, cinnamon, and nutmeg. Cook for about 2-3 minutes, allowing the pecans to caramelize slightly. Remove from heat and set aside.
  • Top with Marshmallows: Remove the sweet potato rounds from the oven and top each one with a few mini marshmallows. Return them to the oven for about 2-3 minutes, or until the marshmallows are golden and slightly melted.
  • Add the Pecans: Remove the sweet potatoes from the oven and top each one with a spoonful of the maple syrup and pecan mixture.
  • Serve: Serve warm and enjoy these deliciously sweet and savory bites!

Notes

  • For a richer flavor, you can add a pinch of cayenne pepper to the sweet potato seasoning.
